ingredients

for the flatbreads:

  • 2 cups (250g) all-purpose flour
  • ¾ cup (180ml) plain yogurt
  • ¼ cup (60ml) warm water
  • 2 tbsp olive oil, plus more for cooking
  • 1 tsp baking powder
  • ½ tsp salt

for the topping:

  • 2 tbsp za'atar spice blend
  • 3 tbsp olive oil
  • ½ cup labneh or thick Greek yogurt
  • Fresh mint leaves
  • 1 cucumber, sliced or chopped
  • Sumac and flaky salt, to finish
If you can't find za'atar, mix 1 tbsp dried thyme + 1 tbsp sesame seeds + 1 tsp sumac. Labneh can be substituted with Greek yogurt mixed with a pinch of salt.

  1. Make the dough: In a large bowl, combine flour, baking powder, and salt. Add yogurt, olive oil, and warm water. Mix until a shaggy dough forms.
  2. Turn dough onto a floured surface and knead for 2-3 minutes until smooth. Cover and rest for 15 minutes.
  3. Prepare the za'atar oil: In a small bowl, mix za'atar with 3 tbsp olive oil to form a paste. Set aside.
  4. Divide dough into 4 equal pieces. On a lightly floured surface, roll each piece into a thin circle or oval (about ⅛ inch thick).
  5. Heat a large non-stick skillet or cast-iron pan over medium-high heat. Brush one side of a flatbread with a little olive oil.
  6. Place oiled-side down in the hot pan. Cook for 1-2 minutes until bubbles form and the bottom is golden. Brush the top with more oil, flip, and cook the other side for 1-2 minutes.
  7. Remove from pan and immediately brush with the za'atar oil mixture. Repeat with remaining dough.
  8. Serve warm with labneh, fresh cucumber, mint leaves, a sprinkle of sumac, and flaky salt.
nia's tip: These flatbreads are best fresh, but you can make the dough ahead and refrigerate for up to 24 hours. They're also wonderful with a drizzle of honey on top for a sweet-savory twist.
