ingredients

  • 2 ripe peaches, sliced
  • 8 oz (225g) burrata cheese
  • 2 cups fresh arugula or basil
  • 3 tbsp extra virgin olive oil
  • 1 tbsp aged balsamic vinegar
  • ¼ cup toasted pistachios
  • flaky sea salt & black pepper
use ripe but firm peaches for the best texture. if peaches aren't in season, ripe nectarines work beautifully.

instructions

  1. Arrange arugula or basil leaves on a large serving platter.
  2. Slice the peaches into wedges about ½-inch thick. arrange them over the greens.
  3. Gently tear the burrata into pieces and nestle among the peaches. let the creamy interior spill out a little.
  4. Scatter toasted pistachios over the top.
  5. Drizzle with olive oil and balsamic vinegar. finish with flaky sea salt and freshly cracked black pepper.
  6. Serve immediately with crusty bread on the side.
yasmin's tip: For extra depth, add a few drops of honey or a sprinkle of za'atar just before serving.
